Zesty Vegetable Pizza

If you're going to eat vegetables, they may as well be on pizza! This easy veggie pizza recipe is healthier option to feed your craving. It's a quick pizza recipe that goes from oven to table in no time. Just use pre-made pizza dough and top it with some mozzarella cheese and your favorite veggies and seasonings. The whole family will love it for pizza or movie night.

Ingredients

  • 3 tablespoons olive oil, divided

  • 1 package refrigerated pizza crust

  • 1 tablespoon red wine vinegar

  • 2 cloves garlic

  • 1 teaspoon dried basil

  • 1/2 teaspoon salt

  • 1/4 teaspoon ground black pepper

  • 1 cup zucchini

  • 1 cup yellow squash

  • 1/4 cup red onion

  • 1/2 cup Parmesan cheese

  • 1 plum tomatoes

  1. Preheat oven to 400ºF. Lightly grease pizza pan with 1 tablespoon olive oil.
  2. Unroll crust and gently stretch and press to cover bottom of pan.
  3. In medium bowl, combine remaining 2 tablespoons olive oil, vinegar, garlic, basil, salt and pepper; mix well. Add zucchini, squash and onion; toss to coat. Sprinkle 1/4 cup cheese over crust; top evenly with zucchini mixture. Arrange tomato over top of pizza; sprinkle with remaining cheese.
  4. Bake 16-18 minutes or until crust is brown and crisp.
