It’s a quick pizza recipe that goes from oven to table in no time. Just use pre-made pizza dough and top it with some mozzarella cheese and your favorite veggies and seasonings. The whole family will love it for pizza or movie night.
Preheat oven to 400ºF. Lightly grease pizza pan with 1 tablespoon olive oil.
Unroll crust and gently stretch and press to cover bottom of pan.
In medium bowl, combine remaining 2 tablespoons olive oil, vinegar, garlic, basil, salt and pepper; mix well. Add zucchini, squash and onion; toss to coat. Sprinkle 1/4 cup cheese over crust; top evenly with zucchini mixture. Arrange tomato over top of pizza; sprinkle with remaining cheese.
Bake 16-18 minutes or until crust is brown and crisp.
