Snowman Cake

Celebrate a winter birthday, wedding or baby shower with this Winter Wonderland Snowman Cake. Decorated with meringue cookie snowmen and candy-coated trees, this winter celebration cake is a fun challenge for all bakers. Fill your cake with as many snowmen as you'd like, or use it to announce the coming of a new little snowball to the family! Because several of these decorations need to be made a day in advance, plan ahead while making this cake.

  1. All decorations, including snowmen and trees, should be made one day in advance.
  2. Make meringue snowmen (one day in advance)

    Prepare the cookie pan with parchment paper. Use the straight side of “B”, “C”, “D” and “E” cut-outs to trace circles on the back of parchment paper. Trace two to three of each size. Additionally, draw two to three circles measuring 1½ inch in size (slightly smaller than “D” cut-out).

    Prepare Meringue Cookies Recipe following recipe instructions. Prepare a 16 inch decorating bag with tip 12 and meringue batter.

    Pipe balls following outlines on parchment paper. Bake and cool following recipe instructions.

  3. Make trees (one day in advance).

    Using a serrated knife, cut four sugar cones ranging in height from 2½ inches to 4 inches high (leave remaining cone untrimmed).

    Helpful Hint: Using a food-safe marker, mark the cone at the cut line. Dip the bottom of the cone to mark in hot water. Using a serrated knife, cut off the bottom of the cone.

    Prepare royal icing following recipe instructions. Using the tapered spatula, ice the cones with royal icing. Use the spatula to pull out icing from the cones to make the branches.

    Immediately sprinkle with confectioners’ sugar (use a sifter or tea strainer to dust trees) and set aside to dry overnight. Reserve remaining royal icing.

  4. Assemble snowmen (one day in advance).

    Prepare a parchment bag with reserved royal icing. Using royal icing as glue, assemble the snowman pieces.

    For the large snowman, combine the “B” circle for the body with the “D” circle for the head.

    For the medium snowman, combine the “C” circle for the body with the 1½ inch circle for the head.

    For the small snowman, combine the “D” circle for the body with the “E” circle for the head. You’ll have extra meringues to choose from, so select the best ones!

    Using the black icing color, tint ¼ cup of royal icing black.

    Prepare a decorating bag with tip 2 and black icing. Pipe eyes and buttons on snowmen. Using reserved white royal icing, attach jumbo orange nonpareils for noses.

  5. Bake cake. On the day of, bake the cake. Prepare cake batter following recipe instructions. Bake the two cake layers and place them on wire racks to cool completely.
  6. Level, fill and stack cake layers with the flat side of the cake facing up.
  7. Using a spatula, frost the cake, leaving spatula marks on the top and on sides of the cake for an added effect.
  8. Decorate cake. Top cake with trees and snowmen. Sprinkle with the remaining confectioners’ sugar for a snowy finish.
