Cheerful Watermelon Cupcakes

Aren’t these watermelon cupcakes super cute? This cupcake recipe is easy to make and the results are 100% edible using our Candy Melts candy. Just melt candy and pipe to trace over waxed paper using our print-out pattern! Get your green food coloring ready and before you know it you’ll be ready to celebrate summer. These bright and cheerful cupcakes complete with fake watermelon seeds are great for celebrating the 4th of July or long holiday weekends!

  1. Make Cupcakes. Prepare white cake mix according to directions. Using Leaf Green icing color with a touch of Lemon Yellow, tint batter green. Bake and cool in green cupcake liners.
  2. Make Watermelon Toppers Print desired amount of copies of pattern. Place pattern on cake board, use tape to keep in place. Place wax paper over pattern, use tape to keep in place.

    In disposable decorating bags, melt 4 oz. of each color candy according to instructions on package.

    Using scissors, cut off about ¼ in. of bag from end tip. Using green candy, pipe bottom curved line of pattern. Pipe white candy next to green. Pipe pink candy to fill in watermelon slice; tap gently to ensure there are no small gaps and all colors are touching. Chill until set about 5 minutes. Using black melted candy and the bead technique, pipe seeds. Chill until set, about 5 minutes.

  3. Tint Icing. Combine Christmas with Rose icing colors to get pink icing shown.

    Combine Moss with Leaf and Lemon icing colors to get green shown for icing.

    Using color combinations provided, tint 2 cups icing green and 2 cups pink.

  4. Prepare Bags. Prepare decorating bag with 1M tip and pink icing. Prepare another decorating bag with tip 2A and green icing.
  5. Decorate Cupcakes. Using green icing, pipe band along edge of cupcake. Top with green jimmies. Using pink icing, pipe swirl in cupcake center. Top with mini chocolate chips. Place watermelon candy slice on top of decorated cupcake.
