Create the most amazing cake using just one decorating bag and tip. This beautiful sky blue-iced cake is decorated with drop strings on the sides and scallops on the top using Wilton Cake Decorating Tip 5.
Make cake. Prepare batter following recipe directions. Bake and cool cake. Cake is three layers. Two 2 in. high layers, and one layer trimmed to 1 in. high for a 5 in. high tier. Place on foil-wrapped cake circle.
Decorate cake. Prepare buttercream icing following recipe directions. Tint light blue. Use spatula and blue icing to ice cake smooth.
Use cake dividing chart to divide cake into 10ths. Mark at bottom with toothpick. Use cake marker to mark 1 in. divisions from bottom mark to top on cake sides. Mark the center top of the cake. Use toothpick and ruler to mark three 1 in. divisions on top of cake from center to edge of cake.
Use tip 5 and blue icing to pipe drop strings between divisions marked on sides. Use tip 5 and blue icing to pipe scallops between division marks on cake top as well as to pipe large center dot. Pipe tip 5 dots at all points on cake sides and top.
The drop string is traditionally used as decoration on the sides of the cake and is the basis of more ornate string work. Called a "drop" string because the line of piped icing is allowed to "drop" or fall, by itself, before reattaching it to your cake. Pipe a row of single strings or multiple strings in rows of two or three.
