Snowman Sugar Cookies

Ingredients

  • White Sparkling Sugar

  • Chocolate Chips

  • Mini Chocolate Chips

  • Orange Mini Candy-coated chocolates

  • Roll-Out Sugar Cookie

  • 1 cups granulated sugar

  • 1 cup (2 sticks) butter, softened to room temperature

  • 1 egg

  • 2 teaspoons vanilla extract

  • 1/2 teaspoon almond extract

  • 3¼ cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • Royal Icing

  • 4 cups (about 1 lb.) confectioners' sugar

  • 5 tablespoons warm water

  • 3 tablespoons Meringue Powder

  • Tools

  1. Bake Cookies. Preheat oven to 350?.
  2. Cream butter and sugar in a large bowl with an electric or hand mixer until light and fluffy. Beat in egg, vanilla extract, and almond extract.
  3. In a separate bowl, mix together the flour, baking powder, and salt. Add the dry ingredients to the butter mixture 1 cup at a time, mixing in between each cup.
  4. Divide the batter in two balls and set on a floured surface. Roll out each ball with a rolling pin to make each section about 12 inches in diameter and ? inch thick.
  5. Dip cookie cutter A in flour before carefully cutting out each shape.
  6. Bake the cookies on an ungreased baking sheet for 8-11 minutes or until the cookies are lightly browned.
  7. Cool cookies on a cooling rack and cool completely.
  8. Prepare Royal Icing. Beat powdered sugar, water, and meringue powder together until peaks form. This usually takes about 7-10 minutes on a low speed using an electric stand mixer, or 10-12 minutes at high speed with a hand-held mixer.
  9. Let icing sit for 15 minutes to an hour to allow air bubbles to rise.
  10. Reserve 1 cup of stiff royal icing to use later for decorating and thin the remaining icing to flooding consistency.
  11. Ice Cookies. Place the cookies on a cooling grid over a cookies sheet. Using a spatula, ice each cookie then immediately sprinkle with sparkling sugars.
  12. Decorate Cookies. Use regular chips for eyes and buttons, mini chocolate chips for mouth.
  13. Add orange candy coated chocolates for nose.

Notes

    • How to thin royal icing.
    • Add 1 teaspoon of water per cup of royal icing to reach flooding consistency. Gradually add the water in ½ teaspoon increments until reaching the desired consistency.
    • How to tell if royal icing is the correct flooding consistency.
    • Scoop a small amount of icing using a spatula and slowly drop the icing back into the bowl. The icing is the correct consistency if it sinks back into the bowl after a full count of 10 seconds.
    • Add extra flavorings to your cookies.
    • Customize your cookies with different flavorings, like peppermint or lemon. Simply substitute out the almond and vanilla extract for your favorite flavorings.
