Royal Icing Easter Cookies

  1. Make cookies: Preheat the oven to 350°F.
  2. In a large bowl, cream the butter and sugar with an electric stand mixer or hand mixer until light and fluffy. Beat in egg and extracts.
  3. Mix together flour, baking powder and salt. Gradually add dry ingredients to butter mixture 1 cup at a time, mixing after each addition. Do not chill dough. Divide dough into 2 balls.
  4. On a lightly floured surface, roll the dough into a circle approximately 12 inch diameter x 1/8 inch thick.
  5. Dip the cookie cutter in flour before each use and cut out shapes.
  6. Bake cookies on an ungreased baking sheet 8-11 minutes or until cookies are lightly browned. Move cookies to a cooling rack to cool completely.
  7. Prepare icing: Prepare a decorating bag with tip 3 and royal icing; outline cookies. Thin remaining icing; flow in. Let cookies dry overnight.
  8. Decorate cookies: Using color combinations provided, tint 1 cup icing lavender, 1 cup icing violet and 1 cup icing green.
    • Lavender: Combine Violet and Royal Blue food coloring
    • Violet: Combine Violet and Rose food coloring
    • Green: Use Moss Green food coloring
  9. Prepare a piping bag with tip 2 and green icing. Pipe stems for flowers.
  10. Prepare a piping bag with tip 2. Stripe the bag with lavender and violet icing. Pipe flowers and dots on cookies.
