Raspberry Coconut Cookie Pizza Recipe

Have you tried pizza for dessert? Pizza in any form is fun to make and scrumptious to eat. Bake a cookie crust, add raspberry jam “sauce”, drizzle with Wilton® white Candy Melts® candy and sprinkle with coconut for the “cheeses.” So easy-to-make, and it feeds a crowd.

Step 1

Preheat oven to 350°F. Prepare pizza pan with vegetable pan spray.

Step 2

In large bowl, stir together flour, baking powder and salt.

Step 3

In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Add egg, milk and vanilla; mix until well combined. Add flour mixture and mix until just combined and press into prepared pan. Prick dough with fork and bake 15-20 minutes or until golden brown. Cool completely in pan on cooling grid.

Step 4

Spread raspberry jam over cookie; top with almonds.

Step 5

In medium microwave-safe container, melt bright white Candy Melts candy according to package instructions. Drizzle over pizza. Sprinkle with coconut.
