Pulled Pork Cakewich Recipe
Sandwich juicy pulled pork and tangy cream cheese between layers of home-style cornbread and you have the ultimate game day snack, the Pulled Pork Cakewich. No overtime required either. Use the Easy Layers Pan Set to bake 5 layers of fluffy cornbread at once.
Preheat oven to 400°F. Prepare Easy Layers Pan Set with vegetable pan spray.
In large bowl, whisk together flour, cornmeal, baking powder, baking soda, salt, and cheese.
In medium bowl whisk together butter, buttermilk and eggs until well combined. Stir into cornmeal mixture until just combined. Spoon mixture evenly into prepared pans, filling nearly full.
Bake 10-12 minutes or tops of cornbread spring back when touched. Cool in pan on cooling grid 5 minutes. Remove from pans; cool completely on grid.
For filling, stir together cream cheese, green onions, and milk until well combined.
To assemble, place one cornbread layer on serving plate. Spread a thin layer of cream cheese over and top with pulled pork. Repeat.
Serves about 12.
