Fall Mini Apple Pie and Apple Pie Sandwiches Recipe
Looking for a fall dessert traditional in taste yet trendy and fun? Here it is! This recipe transforms apple pie into easy-to-eat hand-held Apple Pie Pops or Apple Pie Ice Cream Sandwiches. You will love this clever recipe as it does not involve any slicing or utensils to serve, making this a new favorite fall treat.
In large bowl, stir flour and salt together. Using a food processor or fork, cut butter into flour until mixture resembles cornmeal. Add 8 tablespoons cold water and combine until mixture holds together in large clumps. Add additional water tablespoon by tablespoon if the dough is still dry. Divide dough into two discs, cover with plastic wrap and chill at least 1 hour.
To prepare filling, melt butter in a medium saucepan over medium-high heat. Add apples, cinnamon and salt; cook 5 minutes or until apples begin to soften and release liquid.
In small bowl, stir together sugar and cornstarch until well-combined. Add sugar mixture to apples and cook, stirring constantly, 5 minute or until apples are tender and any liquid has started to boil. Remove from heat and let cool to room temperature.
Preheat oven to 400°F. Prepare cookie sheets with parchment paper.
In small bowl, beat egg with 2 tablespoons water until well-combined.
Roll each pastry disc to about 1/8 in. thick. Use 3-1/4 in. cutter to cut circles. Use leftover dough to reroll as necessary and cut additional circles, for a total of 32 circles.
Place 16 circles on prepared cookie sheets, spacing at least 2 inches apart. Brush the edges of each circle with the egg mixture. Spoon about 1 heaping tablespoon pie filling on top of each circle. Place a lollipop stick (if using) in the center of the filling. Place a second circle on top and use a fork to seal the edges. Seal area around the stick well.
Brush the top of each circle with the egg mixture and sprinkle with Sparkling Sugars. Using a knife, cut a small ‘X’ in the center of the pie.
Bake 28-30 minutes or until crust is golden brown. Serve warm or at room temperature.
If using for ice cream sandwiches, sandwich ice cream between two pies. Serve immediately.
