Meringue Unicorn Horns

Made using a light and airy meringue batter, these Meringue Unicorn Horns are as magical and sweet as their namesake! Use Wilton icing colors to lightly tint a small portion of batter, then stripe your decorating bag to create a neat piping effect on your treats. A fun party favor for birthday parties, these meringue pops are sure to become a favorite for unicorn lovers of all ages. Due to the nature of the meringue, these treats do need to be made in advance, to take care to plan ahead if making these for a party.

  1. For best results, prepare and bake treats one day in advance.

    Prepare meringue batter. Prepare meringue batter following recipe instructions, reducing sugar to 1 cup.

  2. Tint batter. Add 2 tablespoons batter to three mixing bowls. Using Pink, Sky Blue and Violet icing colors, tint one portion each light pink, light blue and light purple. Reserve remaining batter white.
  3. Prepare decorating bag. Prepare decorating bag with white batter. Cut large tip in bag. Set aside.

    Prepare second decorating bag with tip 1A. Using spatula, stripe bag with tinted batter (four lines of each color). Carefully fill striped bag with white batter. Set aside.

  4. Prepare pan. Using pencil and ruler, draw three 6½ in. tall x 1½ in. wide triangles on backside of parchment paper. Turn paper right-side up. Attach parchment paper to cookie sheet using small dot of meringue batter in each corner.
  5. Pipe cookies. Hold bag at angle (tip facing away from you) so one edge of tip touches surface. Starting at wide end of triangle, pipe swirling motion to fill in triangle, decreasing pressure towards narrow end of triangle.

    Insert cookie sticks into wide end of triangles, leaving about 3 in. exposed for handle.

  6. Bake cookies. Bake at 200 degrees F for 40 minutes. For best results, do not open oven door during baking.

    After 40 minutes, turn oven off. Leave cookies in oven to dry overnight (8 to 10 hours).
