Lemon Basil Cake

  1. Preheat oven to 325°F. Prepare Easy Layers Pan Set with vegetable pan spray.
  2. In large bowl, stir together flour, baking powder and salt.
  3. In large bowl, beat butter and sugar with electric mixer until light and fluffy. Add eggs one at a time, mixing well after each. Add Fresh Basil Flavor; mix well. Add flour mixture alternately with milk, beating until just combined. Divide evenly into pans.
  4. Bake 18-21 minutes, rotating pans half way between baking, or until toothpick inserted in center comes out clean. Cool cakes in pan on cooling grid 5 minutes. Loosen edges of cake and remove from pans; cool completely on grid.
  5. For filling, beat cream cheese until smooth and creamy. Add confectioners' sugar and Sweet Meyer Lemon Flavor, beating until smooth and well combined.
  6. To assemble, cut crowns off of each cake layer. Place first layer on cake board or serving plate. Spread a layer of icing to edges of cake. Repeat, alternating layers of cake and icing.
