Homemade Peach Cobbler

If you have millions of peaches and not enough time to make a pie, a cobbler is a tasty solution! The topping comes together quickly for an ideal summer dessert with less fuss. Serve with a scoop of vanilla ice cream or some fresh whipped cream for the perfect finishing touch for parties and backyard barbecues.

Ingredients

    • 3/4 cup firmly-packed light brown sugar

    • 3 tablespoons cornstarch

    • 1 teaspoon ground cinnamon

    • 1/4 teaspoon ground ginger or 1 teaspoon grated fresh ginger

    • 1/4 teaspoon ground allspice

    • 8 cups peeled sliced peaches (from about 4 pounds)

    • 2 cups all-purpose flour

    • 1/4 cup firmly-packed light brown sugar

    • 1 tablespoon baking powder

    • 1/2 teaspoon salt

    • 1/2 cup (1 stick) cold butter, cut into small pieces

    • 1/2 cup milk, plus more for brushing

    • 1/2 teaspoon vanilla extract

    1. Preheat oven to 350°F. Spray a 9 x 13 in. oblong pan with vegetable pan spray.
    2. In a large bowl, stir together brown sugar, cornstarch, cinnamon, ginger and allspice. Add peaches and toss until coated. Pour peach mixture into the prepared pan.
    3. To prepare topping, stir together flour, brown sugar, baking powder and salt in a large bowl. Add butter and cut into flour mixture using a pastry blender or 2 forks until mixture resembles coarse crumbs. Stir in milk and vanilla until a soft dough forms. Divide dough into 12 pieces and place onto peach mixture. Brush tops of dough pieces with milk and sprinkle with sparkling sugar.
    4. Bake cobbler 35-40 minutes or until topping is golden and filling is bubbly. Serve warm.

    Notes

    • Frozen peaches may be substituted for fresh. They should be fully thawed and drained before proceeding with the recipe as written.
