

Refreshing Coconut Buttercream Frosting Recipe
This coconut frosting is easy to whip up whenever you want to add an extra boost of flavor. Ingredients
3/4 cup solid vegetable shortening
3/4 cup (1 1/2 sticks) butter, softened
6 cups powdered sugar (about 1 3/4 pound confectioners’ sugar)
1/4 cup coconut milk
1/4 teaspoon coconut extract (optional)

- In a large bowl, beat shortening and butter with an electric mixer until smooth.
- Gradually add sugar, 1 cup at a time, beating well after each addition. Scrape sides and bottom of the bowl after each cup of sugar is added. When all sugar has been mixed in, the frosting will appear dry.
- Add coconut milk and coconut extract (if using); beat on medium speed until frosting is light and fluffy.

- Finish off your treats with toasted coconut flakes
- To store: Frosting should be stored in an airtight container in the refrigerator for 2 weeks and can be frozen for up to 6 weeks. Bring back to room temperature and re-whip before using.
