Step 1

Ingredients:

Muffins

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup milk
  • 1 egg, lightly beaten
  • 3 tablespoons butter, melted

Topping

  • ¼ cup all-purpose flour
  • 2 tablespoons brown sugar
  • ¾ teaspoon ground cinnamon
  • 2 tablespoons butter, softened
Step 2

Preheat oven to 350ºF.

Step 3

Spray cavities with vegetable spray or line with baking cups.

Step 4

In large bowl, combine flour, sugar, baking powder, cinnamon and salt.

Step 5

In small bowl, whisk milk, egg and melted butter until well blended.

Step 6

Stir wet ingredients into dry ingredients, mixing only until moistened. Do not overmix. Divide batter into muffin cups.

Step 7

For topping, combine flour, sugar and cinnamon. Cut in butter until mixture is crumbly. Sprinkle evenly over muffins.

Step 8

Bake 16-18 minutes or until golden brown.

Makes 6 muffins.

Rated 2 out of 5 by from Weird texture The flavor was ok but the texture was completely off. Very gooey and dense, even though they were baked completely. I’m guessing a little more flour and adding baking soda as well as powder might help.

Rated 2 out of 5 by from Too Springy I made these muffins today, and I can say I have made better. I followed the instructions, and I ended up with some springy muffins. Not dense or cake-like at all. The flavor was okay, but hard to taste with the terrible texture. Should of stuck with my old recipes.

Rated 3 out of 5 by from Not Sweet Enough The streusel topping was delicious, I added 1/4 cup of brown sugar as suggested in other reviews. I also added a little apple pie spice to the muffin and topping. However, while the topping was fantastic, the muffin itself was lacking in sweetness, and was bland in comparison to the topping. I like sweeter and more flavorful than these were.
