  1. Prepare macaron batter. Preheat oven to 275°F. Prepare 2 baking sheets with parchment paper. Fit a 16 inch decorating bag with decorating tip 10. Sift powdered sugar and almond flour together.

    In a large bowl, beat egg whites, cream of tartar and salt on high speed until foamy. With the mixer running, gradually add in small amounts of granulated sugar at a time. Add vanilla. Continue whipping just until the mixture forms stiff peaks. Gently and gradually pour the almond mixture over the whipped egg whites. Using a rubber spatula, fold the dry ingredients into wetSeparate the batter into three bowls. ingredients in batches to avoid deflating the egg whites. Gently fold the almond flour mixture into the egg whites until the mixture holds.

    Separate the batter into three bowls.

  2. Tint batter. Using Sky Blue icing color, tint one bowl batter light blue and one bowl dark blue. Tint remaining bowl ivory using color combination provided.

    Prepare three decorating bags with tip 1A. Fill each separately with tinted batter. Pipe batter onto pans, following recipe instructions. Top light blue cookies with Gold Pearlized Sugar before baking. Bake and cool cookies.

    *Combine Golden Yellow and Ivory icing colors to get ivory color shown.

  3. Tint icing. Divide icing equally into three bowls. Using Sky Blue icing color, tint one bowl light blue. Using Teal icing color, tint one bowl teal. Leave remaining bowl white.
  4. Assemble cookies. Prepare three decorating bags individually with tinted and white icing; cut small tip in each bag. Fill and sandwich light blue cookies with light blue icing. Fill and sandwich dark blue cookies with white icing. Fill and sandwich ivory cookies with dark blue icing.
