- Bake and cool cupcakes. According to mix or recipe directions.
- Prepare Sprinkles Mix. In small bowl, mix nonpareils.
- Prepare Pattern. Tape BE KIND pattern to cake board. Place waxed paper over pattern.
- Melt Candy Using microwave, melt 4 oz. Bright White Candy Melts candy in disposable decorating bag, according to package instructions.
- Trace Letters. Cut ½ in. off decorating bag tip. Pipe melted candy over pattern, immediately coat with nonpareils mix. Let set, about 10 minutes.
- Make Toppers. Cut lollipop sticks in half. Carefully remove letters from waxed paper. Pipe small amount of candy to back of letter, attach lollipop stick. Let set, about 10 minutes.
Tint Icing. Combine Teal and Kelly Green icing colors to get color shown.
Tint 2 cups icing Teal using color combinations provided.
- Decorate cupcakes. Prepare decorating bag with tip 4B and teal icing, pipe swirl.
- Top Cupcakes. Place each letter into cupcakes, arrange according to message.

- Use grease-free tools: Grease-free tools are a must to ensure meringue sets properly.
- Avoid using a plastic mixing bowl: Plastic mixing bowls can retain fat and grease from past recipes, so use a glass or metal mixing bowl.
- Avoid under or over beating: Make sure to beat until stiff peaks are reached and don’t beat past that point.
- Cookie size: Larger cookies tend to be chewier inside, and smaller ones are easier to get crispy all the way through. For consistent sizing, trace the desired circle size on the backside of the parchment paper with a pencil.
- To flavor: Add a 1/4 teaspoon of your favorite extract such as almond or peppermint to the meringue batter in the same step the vanilla. Add more as needed until you reach the desired flavor.
- To store: meringue cookies will last for up to a week in an airtight container
