Veggie Penne Pasta


A pasta dish full of fresh vegetables and cheese isn’t just better for you, it’s delicious and everyone will ask for seconds. Try this quick and easy recipe with yellow squash, tomatoes and zesty garlic, or switch it up using any fresh, in season vegetables for an easy-to-make dinner.

Step 1

Preheat oven to 350°F. Prepare 13 in. x 9 in. pan with vegetable pan spray.

Step 2

In large bowl, combine pasta, squash, spinach, crushed tomatoes, marinara sauce, and garlic. Mix until well combined. Pour mixture into prepared pan. Top with mozzarella cheese.

Step 3

Bake for 22-25 minutes or until lightly browned. Sprinkle with basil, if using.
