Preheat oven to 325°F. Prepare muffin pan with baking cups.
In medium bowl, combine cake flour, sugar, 2/3 cup almond milk, oil, baking powder, 1 teaspoon vanilla and salt. Beat with an electric mixer on medium speed until batter is smooth. Divide evenly among baking cups.
Bake 25-27 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes. Remove to cooling grid; cool completely.
For icing, in medium bowl, beat vegan spread and confectioners’ sugar with an electric mixer until light and fluffy. Add 1/2 teaspoon vanilla; beat until combined. If icing looks dry, add 1-2 tablespoons of almond milk and beat until smooth. Pipe or spread icing onto cupcakes.
