Step 1

Preheat oven to 375°F.

Step 2

In small bowl, combine flour and baking soda. In large bowl, beat peanut butter, butter and brown sugar with electric mixer until light and fluffy. Add applesauce and vanilla; beat until combined. Slowly add flour mixture; beat until combined. Form dough into 1 in. balls; roll in sugar. Place on ungreased cookie sheet; flatten with the bottom of a glass.

Step 3

Bake 6-8 minutes or until golden brown. Cool on cookie sheet 2 minutes; remove from pan and cool completely on cooling grid.
