

Sweet Lemon Meringue Cupcakes
Ingredients
1 box yellow cake mix
10 oz. jar lemon curd
Meringue Powder, 4 oz. Egg White Substitute
Basic Meringue
Tools
White Cupcake Liners, 75-Count
12-Inch Disposable Decorating Bags, 12-Count
Perfect Results Premium Non-Stick Bakeware Muffin and Cupcake Pan, 12-Cup
Open Star Cake Decorating Tip 1M
10 x 16 Chrome-Plated Cooling Rack

- Bake cupcakes. Prepare cake mix following package instructions. Bake and cool cupcakes in white cupcake liners.
- Fill cupcakes. Using treat corer, core out cupcakes. Fill with lemon curd.
Prepare icing. Position oven rack 8 to 10 in. from top of oven. Preheat broiler.
Prepare meringue batter following recipe instructions.
Prepare decorating bag with tip 1M and meringue batter. Place cupcakes back in muffin pan. Pipe swirl on top of each cupcake. Broil 30 to 45 seconds, or until meringue is lightly toasted.
