Sweet Lemon Meringue Cupcakes Recipe

These Sweet Lemon Meringue Cupcakes are a little taste of summer in every bite! A great treat for summer celebrations, weddings or baby showers, these sweet lemon cupcakes are filled with lemon curd and topped with an easy meringue icing made with our Meringue Powder. Use your favorite yellow cake mix or recipe to build these easy cupcakes and enjoy the bright flavors of summer anytime of year!

Step 1

Bake cupcakes. Prepare cake mix following package instructions. Bake and cool cupcakes in white cupcake liners.

Step 2

Fill cupcakes. Using treat corer, core out cupcakes. Fill with lemon curd.

Step 3

Prepare icing. Position oven rack 8 to 10 in. from top of oven. Preheat broiler.

Prepare meringue batter following recipe instructions.

Prepare decorating bag with tip 1M and meringue batter. Place cupcakes back in muffin pan. Pipe swirl on top of each cupcake. Broil 30 to 45 seconds, or until meringue is lightly toasted.
