Make chick features one day in advance. Tint portions of fondant blue and rose. Use fondant roller with pink guide rings to roll out fondant 1/16 in. thick. For wings, use small leaf Cut-Out to cut two feathers per chick.
For beak, roll a ball of fondant 1/4 in. dia. Flatten and shape into triangle, making beak 1/3 in. long.
For legs, use scissors to cut two pieces of licorice per cupcake, each 11/2 in. long.
Let all dry 24 hours on cornstarch-dusted cake board.
Make cupcakes. Prepare cupcake batter following recipe. Bake and cool cupcakes. Prepare buttercream icing. Tint portions blue, rose and a small amount black. Use spatula and blue and rose icing to ice cupcakes smooth.
Assemble chicks. Insert tail feather and beak into cupcake. Use tip 2 and rose or blue icing to pipe dot on feather; attach to cupcake. Use tip 2 and black icing to pipe dot eye. Insert licorice into side of cupcake. Use tip 2 and rose or blue icing to pipe feet.
