In bowl of food processor, process strawberries and lemon juice until a smooth puree forms. Strain puree in fine mesh strainer, discarding seeds (1/2 cup puree should remain). Discard solids.
In large bowl, beat shortening and butter with electric mixer until well combined. Gradually add sugar, beating after each cup. Scrape sides and bottom of bowl often. Add Wilton Meringue Powder, salt and lemon zest; beat until combined. Icing will appear dry. Slowly add 1/2 cup puree; beat at medium speed until well combined and fluffy.
