Rated 5 out of 5 by SimplySara from I haven't used the kit, but I've made shaped cookie ice cream sandwiches. I make all my cookies ahead of time and decorate half of them. The decorated cookies are the tops and the undecorated cookies are on the bottom. Then I soften the ice cream on the counter for a little bit (5-15 min depending on the size of the container) and scoop the ice cream on the undecorated cookie, flat side down. I lightly press the decorated cookie on top and put them on a baking sheet in the freezer for 1/2 and hour. After that you can stack them in an airtight container and serve when ready for a treat.
