Step 1

Bake and cool two 2-layer cakes. Ice cakes smooth with white icing. Prepare for stacked construction and fondant covering. Tint 72 oz. fondant light blue; cover and stack cakes. Position on foil-wrapped cake board.

Step 2

Divide 16 oz. fondant and tint fondant as follows: 4 oz. violet, 4 oz. green, 2 oz. ivory, 3 oz. marbleized light peach with white, 3 oz. marbleized light rose with white. Darken 5 oz. leftover blue fondant.

Step 3

Mold wave border with dark blue fondant. Attach to the bottom borders of both cakes with damp brush.

Step 4

Mold violet and green coral. Attach to cake sides with damp brush.

Step 5

Mold the following: 5 peach stars, 4 pink stars, 5 white sand dollars, 6 peach scallops, 6 pink scallops, 3 peach snails, 3 pink snails, 3 peach Auger shells, 3 pink Auger shells. Brush with white Pearl Dust. Attach to sides of cake with damp brush.

I have never been able to make the gum paste or fondant come out of the cranny's, in spite of trying everything from dusting with powdered sugar, to using corn starch, to using shortening. I would LOVE to see a video on how to perfect this. (I am talking specifically of the coral and waves).

Rated 5 out of 5 by from Keep in mind when you use the mold, you must place the fondant in the mold, then cover with plastic wrap and then take the back of a large knife, like a chef knife, and gently saw back and forth until you scrap off all of the excess fondant off the mold. If you do this you will not need any extra fuss, like dusting the mold, etc. This is super easy to do, even though it's time consuming. I added some extra shells made out of the Wilton Candy Mold. Super cute!
