Whether you’re dreaming of mermaid wishes or starfish kisses, this Mer-mazing Pastel Mermaid Cake is here to make a splash! Made using Rosanna Pansino’s Princess Pan, this cake is great for ocean-inspired parties and celebrations. Fill your cake with a mixture of fun sprinkles for a colorful surprise when you cut the cake open!
Two days in advance, make tail. Using Kelly Green icing color, tint 6 oz. gum paste light green. Using 20 in. fondant roller with orange guide rings, roll out light green gum paste. Using Printable Tail Pattern and knife tool, cut out tail.
Using ball tool, indent line patterns on tail. Let dry overnight on cornstarch-dusted board. Transfer tail to cooling grid, let dry additional 8 to 10 hours.
Bake cake. Prepare cake batter following recipe instructions. Using Princess Pan, bake and cool cakes.
Level, fill and assemble cakes. Ice cake smooth.
In medium bowl, combine sugar gems, white and gold sprinkles, green and blue Sugar Pearls, diamond sprinkles and chocolate-covered candies. Mix to combine. Pour sprinkle mixture into center hole of cake.
Assemble tail. Melt Blue Candy Melts candy according to package instructions. Dip half of two 6 in. lollipop sticks in melted candy. Attach sticks to bottom back of mermaid tail, leaving 1½ in. of each stick exposed at base of tail. Let set, 15 to 30 minutes.
Prepare rice cereal treats following package instructions. Using about 2 oz. of cereal treat mixture, form small dome about 1½ in. tall and 3½ in. wide.
Insert sticks at base of tail into center of cereal treat dome. Attach treat to top of cake. Ice cereal treat dome.
Tint fondant. Using Kelly Green icing color, tint 12 oz. fondant light green. Tint 12 oz. fondant each teal, magenta, dark purple and medium green using color combinations provided. Combine Teal and Kelly Green icing colors to get teal color shown. Combine Pink and Violet icing colors to get magenta color shown. Combine Violet and Royal Blue icing colors to get dark purple color shown. Combine Leaf Green, Lemon Yellow and Ivory icing colors to get medium green color shown.
Using 20 in. fondant roller with orange guide rings, roll out light green, teal, magenta, dark purple and medium green, separately.
Using smooth side of “E” circle cut-out, cut 8 circles in desired colors. Attach to iced cereal treat at base of tail. Using smooth side of “D” cut-out, cut out about 60 circles of each color. Attach to cake in rows around cake, alternating colors and overlapping rows, starting at top of cake and working towards base. Use damp brush to attach bottom of circles to cake and bottom row of half-circles to base of cake.
