Rosanna Pansino For the Love of Christmas and Coffee Cookies
Christmas just isn’t Christmas without cookies, and these holiday lights and coffee cookies are all you need to get in the spirit of the season. Rosanna Pansino’s stamp cookie cutters emboss the cookie dough with a decorating pattern, so outlining and filling in your cookies is as easy as coloring in the lines. One day in advance, bake cookies. Prepare cookie dough following recipe instructions. Using rolling pin with pink guide rings, roll out dough. Using heart and coffee cup cutters, cut and stamp cookie dough. Bake and cool.
Make icing. Prepare royal icing following recipe instructions. Thin to count of 17 to 20.
Tint icing. Tint ¼ cup icing red using color combination provided. Combine Christmas Red and Red-Red icing colors to get red color shown. Using Kelly Green icing color, tint ¼ cup icing green. Using Black, Lemon Yellow and Orange icing colors, tint ¼ cup icing each black, yellow and orange. Reserve remaining icing white.
Decorate cookies. Decorate cookies as follows:
Red and Green Coffee Cups: Prepare decorating bag with white icing. Cut ¼ in. off end of bag. Outline and fill in lid and middle section of coffee cups. Let set, about 1 hour.
Prepare decorating bag with red or green icing. Outline and fill in remaining sections. Let set overnight, or 8 to 10 hours.
Using FoodWriter marker, draw even rows of dots, about ¼ in. apart, on red or green sections of cookie. Connect every other block of 4 dots, forming rows of squares. Fill in squares. Draw rows and columns of diagonal lines through squares, forming plaid pattern.
Christmas Lights Hearts: Prepare decorating bag with white icing. Cut ¼ in. off end of bag. Outline and fill in heart cookies. Let set overnight, or 8 to 10 hours.
Prepare decorating bag tip 1 and black icing. Pipe slightly curved horizontal lines for light strings. Reserve remaining black icing in bag.
Prepare four decorating bags separately with green, orange, yellow and red icing. Cut ¼ in. off end of bag. Pipe lights along string, alternating colors.
Using reserved black icing, pipe small lines connecting lights to string.
