Red, White and Blue Ice Pop Cake

Celebrate the 4th of July with this bomb-tastic Red, White, and Blue Ice Pop Cake. Using a simple star piping technique, this cake is decorated with everyone's favorite patriotic ice pop, as well as red, white and blue sprinkles and swirls. Cut into the cake for an added colorful surprise! A fun and festive way to celebrate Independence Day (or a summer BBQ), this cake shines with American pride!

  1. Bake cakes. Prepare three white cake mixes, separately, following recipe instructions. Using Red base color from Color Right food coloring, tint one portion batter red (45 drops). Using Blue base color from Color Right food coloring, tint one portion batter blue (30 drops). Reserve remaining batter white.

    Bake and cool cakes.

    Trim layers to 1-1/2 in. high. Fill and stack layers for 4-1/2 in. high cake.

  2. Tint icing. Using Color Right base colors, tint icing in the following shades:

    • 4 cups white icing + 1 B = light blue icing
    • 2-1/2 cups white icing + 105 R + 21 O = red icing
    • 2-1/2 cups white icing + 40 B = blue icing
    • 1/2 cup white icing + 1 Y + 1 BR = light brown icing

    Reserve remaining icing white.

    Using light blue icing, ice cake smooth.

  3. Pipe ice pops. Prepare three decorating bags, separately, with tip 16. Fill separately with red, blue and white icing.

    Starting with blue icing, begin piping ice pops around sides of cake (4 rows of 5 stars). Continue with white icing (4 rows of 5 stars). Finish pops with red icing, tapering to a point (one row of 5 stars, then 4, then 3, 2 and then 1).

    Prepare decorating bag with tip 47 and brown icing. With smooth side of tip facing up, pipe sticks.

    Pops should measure about 2-1/2 in. long.

  4. Decorate cake. Carefully add red, white and blue jimmies to sides of cake.

    Prepare decorating bags with Color Swirl couplers. Fill bags separately with remaining red, white and blue icing. Assemble coupler using tip 1M.

    Pipe swirls around top edge of cake.
