Just three ingredients are all you need to make our red velvet cheesecake truffles. Use Wilton Limited Edition Red Velvet Candy Melts candy to create truffles that are easy to make for Valentine's Day, any occasion or get-togethers with friends.
In large bowl, beat cream cheese with electric mixer until light and fluffy. In small bowl, melt Candy Melts candy according to package directions; cool slightly. Gradually beat cooled melted candy into cream cheese mixture until smooth. Stir in 1 cup graham cracker crumbs. Refrigerate about 1 hour or until firm enough to scoop.
Portion into 1-inch balls and place on a parchment-lined cookie pan. Place remaining cookie crumbs in small bowl. Carefully roll truffles in crumbs and place back on parchment-lined cookie pan. Serve immediately or refrigerate until ready to serve.
