Forget the lattes, these Pumpkin Spice Donuts will get you in the fall spirit. Packed with pumpkin pie spice, pumpkin puree and brown sugar, these delicious doughnuts are a great way to start your morning. Top your treats with a coffee glaze and serve alongside a cup of your favorite morning beverage.
Preheat oven to 375°F. Spray Doughnut Pan with vegetable pan spray.
In large bowl, combine flour, sugar, baking powder, pumpkin pie spice and salt. In medium bowl, whisk together pumpkin, eggs, vegetable oil and milk. Add pumpkin mixture to flour mixture; beat until just combined. Fill each donut cup approximately 2/3 full.
Bake 10-14 minutes or until the tops of the doughnuts spring back when touched. Let cool in pan 4-5 minutes before removing.
For glaze, in small bowl, stir together 1 tablespoon milk and instant coffee until coffee is dissolved. Whisk 1/2 cup confectioners’ sugar until smooth. In medium bowl, whisk together remaining 3 tablespoons milk, vanilla and 1 cup confectioners’ sugar. Dip tops of doughnuts in vanilla glaze. Immediately drizzle with coffee glaze. Doughnuts are best served fresh.
