In advance, make lid for jack-in-the-box. Cut 10 in. square from 14 x 20 in. Show 'N Serve Cake Board. Ice laminated side of board smooth with royal icing. Pipe tip 21 stars around border just inside area of lid. Set aside.
Also in advance, use roll-out cookie dough and letters to cut out name. Use hand cookie cutter to cut out two hands; turn one hand over before baking for one right and one left hand.
To fold left hand before baking, fold a 12 x 4 in. piece of aluminum foil in half lengthwise and roll around a thick barrel marker; slide off gently to preserve tube shape. Position foil in left hand and wrap fingers around it. Bake and cool all cookies. Attach 4 in. lollipop sticks to back of letters with royal icing; let dry. Cover letters with tip 12 and royal icing, hands with tip 16 and royal icing (cover both sides). Position candle in left hand and overpipe with tip 16 stars. Set aside.
Glue legs on bottom of 14 in. plate with glue gun. For arms: cut two plastic dowel rods 6 1/2 in. long. Trim one end of each to fit flush against the center stem at the underside of 8 in. plate. Attach with hot glue gun. Cut holes in center of mini baking cups large enough to fit on dowel rod and thread onto arms as shown. Attach hands to ends of dowel rods with royal icing. Let dry at least 24 hours.
For hat, cut 1 in. off opening of sugar cone. Use tip 16 and royal icing to cover with stars. Add tip 16 pull-out star fringe on top. Set aside.
To construct the stand, add 7 1/2 in. column and bottom column bolt to 14 in. plate. Cut center of 10 in. cake circle to allow for column and position on 14 in. plate over column (this will keep the cake level). Cover double thick 14 in. square board with foil; cut center hole for column. Assemble, ice and core 3-layer 10 in. cake on 14 in. square board. Imprint star cutter on cake side; pipe in with tip 18 stars.
Pipe top, side and bottom borders of cake with tip 21 stars. Randomly pipe tip 16 stars on cake sides then position on cake stand and add 6 1/2 in. column. Cut hole in standard baking cups and thread on center column.
Position 8 in. plate with arms over a bowl stabilized with a towel. Pipe tip 127D ruffle on plate edge and second ruffle 1 in. from edge. Pipe tip 16 stars on bottom of half ball cake and turn over on center of plate; add icing to center of ball cake; position 2nd half of ball on top of first. Ice mouth area smooth and outline with tip 4. Cover head with tip 16 stars and pipe in whites of eyes with tip 12 and pupils with tip 4. Add tip 21 pull-out hair.Cut hole in back of gumball and insert lollipop stick. Position gumball for nose. Insert lollipop stick into head to support hat. Position hat and add tip 18 zigzags around bottom.
Insert name cookies into cake. Insert 2 white plastic dowel rods cut to height of cake, 1 in. from back edge of cake at each corner to support box lid. Hot glue two 12 in. wooden dowel rods to back of box lid (leave 6 in. glued to board, with 6 in. extended for placement in cake) keeping them in position with plastic dowel rods on cake. Cover back of lid with foil, making sure dowel rods are covered.
Before serving, place lid in position, leaning against plate edge.
