Step 1

Preheat oven to 325°F. Spray pans with vegetable pan spray.

Step 2

In medium bowl, combine flour, baking soda and salt.

Step 3

In separate bowl, whisk together oil, buttermilk, eggs, vanilla and rum extract. Stir in sugar, pineapple and, if desired, nuts.

Step 4

Add flour mixture; mix well. Pour into prepared pan.

Step 5

Refer to baking chart in techniques section for baking times and temperatures for specific pans.

Step 6

Cool 10 minutes in pan on rack; remove and cool completely before decorating.

Rated 5 out of 5 by from This cake was amazing. I found a coconut buttercream frosting recipe on martha stewarts web site that went with this cake incredibly. This cake mix DOES NOT translate well to cupcakes at all. The recipe is really easy and the end result is so yummy!! I made it for a bridal shower in a 12" heart shapped pan and decorated with daisy's. Bride to be was thrilled.
