Dip apples in caramel. Insert bamboo lollipop sticks into apples near the stems. Melt caramel apple dip and dip apples completely according to package directions. Use a spoon, if necessary, to help cover. Tap apples gently on edge of container to smooth and remove excess candy. Place parchment triangles on cookie sheet, and spray triangles with non-stick spray. Place apples on parchment paper. Let set, about 15 minutes.
Dip apples in light cocoa candy. Melt light cocoa Candy Melts candy in microwave-safe bowl according to package directions. Dip 3/4 of apples in melted light cocoa candy. Tap on edge of bowl to smooth and remove excess candy. Immediately sprinkle with pecans. Place apples on parchment triangle-lined cookie pan. Chill to set, about 5 to 10 minutes. Reserve remaining melted light cocoa candy in parchment bag. Cut bag when ready to decorate with melted light cocoa candy.
Decorate apples. Use reserved melted light cocoa candy to drizzle candy on apples. Place apples on parchment paper triangle-lined cookie pan. Chill until set, about 5 to 10 minutes.
