Two to three days in advance: Add 2 1/2 tablespoons Gum-Tex to 85 oz. fondant. Tint fondant: 18 oz. black; 15 oz. each light gray, dark gray; 12 oz. yellow; 8 oz. brown; 4 oz. light blue, 1 oz. dark blue; reserve 12 oz. white. Make fondant figures and details. Let completed pieces dry at least 24 hours on waxed paper-covered boards. Use tip 2 to outline and fill in paint splotches with tinted royal icing; smooth with finger. Let dry.
Figures: Use yellow or white for bodies. Roll out 5/8 in. thick. Cut a 3 1/2 in. high rectangle tapering from 1 1/2 in. wide at the top to 1 in. wide at the bottom. Smooth and round outside edges. For arms, cut 1 in. deep angled slits starting 1 1/2 in. from top; for legs, cut a 1 3/4 in. deep slit at bottom. Shape and round limbs. Position with arms raised to hold gun and legs in assorted poses (standing, kneeling, sitting, bending); support against pan as needed and let dry two days. Insert boy or girl head picks. Roll out light gray 1/16 in. thick. Use pattern
to cut out goggles; attach using damp brush. Outline goggles and draw eyes with FoodWriter. Attach gun to arms with melted candy. Roll 1/2 in. ball in yellow or white for gloves. Flatten slightly and cut slit for thumb. Attach to hold gun. Shape black 1/2 x 3/4 in. oval shoes; attach.
Sign: Roll out light blue 1/8 in. thick. Use pattern to cut out sign. Roll out dark blue 1/8 in. thick. Cut two 1 x 4 in. strips and attach around two sticks, leaving bottom 3 in. clear to insert into cake. Let dry 24 hours. Print name with FoodWriter. Attach top 1 in. of two Cookie Sticks to back, about 4 in. apart, using melted tinted candy.
Guns: Use black to roll a 2 x 3/8 in. diameter barrel, 3/4 x 3/8 in. long bean-shaped top and 3/4 x 1/2 in. angled handle. Make one for each figure. Let dry 2 days. Attach pieces with melted black candy.
Rocks: Use dark and light gray to shape 25 assorted rocks from 3/4 to 1 in. high. Use light gray and brown to shape three larger boulders 2 1/2 x 3 in. high to 4 x 2 in. high.
Tires: Use black to shape 1 1/2 in. diameter balls. Flatten to 1 1/8 in. thick. Poke hole in center with cookie stick; shape with finger into 1 7/8 in. diameter tire. Use knife to indent tread marks. Make 10.
Barrels: Use dark gray to shape a 1 5/8 x 1 1/2 in. diameter log. Cut four barrels, 1 3/4 in. high. Roll out light gray 1/8 in. thick. Cut 1/4 x 5 in. strips; attach three around each barrel using damp brush.
Boards and Screens: Roll out dark gray and brown 1/8 in. thick. Cut one dark gray and nine brown assorted shapes from 3 1/4 x 1/2 in. wide (narrow brown boards) to 2 1/2 x 4 in. wide (large dark gray screen). Using knife, score individual board lines 3/8 in. wide.
Zigzag Towers: Use light gray to roll 1/2 in. diameter logs 16 1/2 and 15 in. long. Zigzag back and forth, securing with damp brush, to build towers 2 1/2 x 2 1/2 in. high and 1 1/2 x 4 1/2 in. high.
Bake and cool 1-layer cakes (3 in. high). Tint fondant: 56 oz. green, 10 oz. dark green. Prepare and cover cakes with green fondant. For bottom borders, roll out dark green 1/8 in. thick. Cut 1 in. wide strips 18, 24 and 30 in. long; use knife to cut wavy top edge. Attach around cakes using damp brush. Insert sign in 6 in. cake. Position figures and details, securing with fondant adhesive if necessary.
