Ingredients

  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • 2 teaspoons baking powder

  • 1 teaspoon salt

  • 1/2 cup milk

  • 1/2 cup sour cream

  • 1/2 cup (1 stick) butter, melted

  • 2 eggs

  • 2 teaspoons lemon zest

  • 1 teaspoon vanilla extract

  • 2 cups mixed berries, such as raspberries, blackberries and blueberries, divided

  • Confectioners’ sugar, to serve (optional)

  1. Preheat oven to 350°F. Prepare a 9 in. round pan with vegetable cooking spray.
  2. In large bowl, whisk together flour, sugar, baking powder, and salt. Add milk, sour cream, butter, eggs, lemon zest and vanilla. Whisk until combined. Fold in 1 cup berries. Pour batter into prepared pan. Sprinkle remaining 1 cup berries on top of batter.
  3. Bake 45-50 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes in pan on cooling grid; remove and cool completely.
  4. Sprinkle top of cake with confectioners’ sugar, if using.
