No Bake Peppermint Pie
No Bake Peppermint Pie is the kind of dessert that Mrs. Claus puts out for Santa after a long day in the workshop with the elves! It's fun, festive colors and light, airy texture is just perfect for pairing with a heavy holiday meal!

Ingredients

    • Crust

    • 30 chocolate wafer cookies

    • 2 tablespoons granulated sugar

    • 1/4 cup butter, melted

    • Tools

    • Pie Pan

    • Food processor

    • 2 large bowls

    • Electric mixer

    1. Make the Crust: Combine cookies and granulated sugar in a food processor and grind until finely ground. Add the melted butter and then pulse the mixture until it’s combined completely.
    2. Press the pie crust mixture into the bottom and up the sides of a 9 inch pie pan. Refrigerate the crust while preparing the filling.
    3. Prepare Filling & Topping: In a large bowl, combine heavy whipping cream and confectioners’ sugar using an electric mixer on high speed until stiff peaks form.
    4. In another large bowl, beat the cream cheese until it’s smooth. Next, add in the melted candy melts candy and beat the mixture until it’s smooth.
    5. Fold in 1 cup the whipped cream mixture and add peppermint extract until mixture is smooth.
    6. Add in red food coloring until you’ve reached the desired shade of pink..
    7. Spread colored filling on-top of the crust and then top with remaining whipped cream mixture.
    8. Refrigerate to set: Refrigerate pie for 1 hour or until the filling is completely set.
    9. Once set, add peppermint crunch sprinkles, crushed peppermint candy, or crushed candy canes. Enjoy!

    Notes

      • How to make without a food processor.
      • Put the crust ingredients in a ziplock bag and hit them with a kitchen mallet, meat tenderizer or a hammer, to make sure they’re finely ground.
      • Make slicing easier.
      • Because this delicious pie is chilled, it could become harder to slice. If that’s the case, just let it sit out for a few minutes before cutting a slice or try running the knife you’re using under hot water, before slicing.
