Make Shape-N-Amaze 3-D characters three days in advance. Use online directions to create monkey cake toppers.
Make cakes. Prepare batter following recipe directions for two 6 in. x 3 in. cakes (for one 6 in. x 6 in. round tier), one 8 in. x 3 in. round and one 12 in. x 2 in. round. Bake and cool according to pan package directions.
Cover cake base with fondant. Tint 90 oz. of fondant green. Use fondant roller with orange guide rings to roll out 1/8 in. thick. Cover cake base with fondant. Reserve excess fondant.
Cover cakes with fondant. Prepare buttercream icing following recipe directions. Use spatula and icing to lightly ice cakes. Cover cakes with reserved green fondant. Prepare cakes for stacked construction and stack
with tiers off set.
Make waterfall. Tint 61/2 oz. fondant royal blue. Use fondant roller with blue guide rings to roll out 1/16 in. thick. Use knife to cut piece, 6 in. x 5 in. Drape over middle tier and cut out a shape of a waterfall, starting with a 2 3/4 in. wide area on side of middle tier to lower tier and 6 in. wide to upper tier.
Repeat for bottom tier, using a 10 in. x 5 in. piece, with 3 in. wide area going down to 7 1/2 in. wide, meeting up with middle tier. Repeat for board with 7 in. x 2 in. piece. Use brush and piping gel to attach.
With leftover blue fondant, make an assortment of sizes of water bubble balls from 1/4 in. to 5/8 in. dia. Use brush and piping gel to attach bubbles near the inside base edge of waterfall on each tier and board.
Make flower border. Tint 14 oz. of fondant a darker shade of green. Use fondant roller with blue guide rings to roll out 1/16 in. thick. Use knife to cut out bands, 3 in. x 15 in., 3 in. x 18 in. and 3 in. x 34 in.
Use knife to cut each band from 3 in. wide to a 2 in. x 1 in. wide strip. Then, randomly cut one long edge jagged and mark with sharp pick from set on thin foam to create grass. Use brush and piping gel to attach bands around cake, leaving space where water meets next tier. Attach 2 in. high strip first and then 1 in high strip. Bend some blades of grass away from cake.
Tint 1 1/8 in. balls of fondant each orange, rose and yellow. Use gum paste flower cutter set to make medium and large blossoms according to set directions: orange, four large and five medium; rose, five large and four medium; yellow, three large and four medium.
Using a ball of white fondant, 3/4 in., make each blossom a 1/16 in. ball center for each blossom. Use damp brush to attach to blossom. Use brush and piping gel to attach blossoms randomly in grass.
Use brush and sapphire Pearl Dust/lemon extract mixture to paint water lines in waterfall and on some water bubbles.
Make vines. Use remaining green fondant to roll two logs, one 3/8 in. dia. x 9 in. long and 3/8 in. dia. x 7 in. long. Use piping gel and brush to attach to cakes.
Position cake toppers. Use thinned fondant adhesive, if necessary, to attach.
