Step 1

In large bowl, stir together flour, baking powder and salt. In large bowl, beat butter and sugar with electric mixer until light and fluffy. Beat in egg and vanilla. Add flour mixture 1 cup at a time, mixing until just combined.

Step 2

Roll cookie dough into 2 in. balls; press 3 Candy Melts candy discs into the center of each ball, forming the dough around the candy. Place on ungreased cookie pan 2 in. apart; flatten slightly.

Step 3

Bake 18-20 minutes or until edges of cookies are lightly browned. Cool on cookie pan 2 minutes; remove to cooling grid. If desired, drizzle tops with remaining melted Candy Melts candy.

Step 4

Cookies are best served warm. Reheat in microwave 30-45 seconds for gooey, just from the oven taste.

Rated 3 out of 5 by from First, there is no oven temperature on this recipe. But a quick search for similar cookies found most baked at 350 degrees. Second, the recipe does not make 2 dozen cookies. Using a 2 inch scoop I only got 18 cookies and I didn't fill the scoop all the way. Third, baking the stuffed cookies for 18 minutes did not actually melt the chocolate pieces. They were still a solid piece of chocolate. Fourth, reheating them in the microwave for 30 seconds did not melt the chocolate either. It was just a scorching hot cookie with a solid piece of chocolate in the middle. The cookies did taste good but I would change the recipe to try more of a thumbprint cookie and see if the candy pieces actually melted.
