Whether you're looking for a little Easter dessert or just something sweet to put a finishing touch on your spring celebration, these Mini Spring Themed Cakes are sure to be a crowdpleaser! Topped with a lovely butterfly made from royal icing, these mini cakes for spring sport colorful decorations and are great for small dinner parties or luncheons. Serve them at birthday parties or any spring baby or wedding shower. Use your favorite cake recipe, then cut out cake layers using the Circle Metal Cutter. Step 1

At least 3 days in advance: Make royal icing small butterflies.

Tape wing patterns to cake board and cover with waxed paper. For easy release, spray waxed paper with non-stick vegetable pan spray and wipe off excess with soft tissue.

For small butterfly, cover with tip 2 outlines. For large butterfly, cover with tip 4 outlines. Make extras to allow for breakage. Let dry 24 hours. Carefully remove from waxed paper. Assemble butterflies on waxed paper-covered board. For small butterfly body, pipe a tip 3 line, 1 in. long. For large butterfly body, pipe a tip 5 line, 1 1/2 in. long; insert wire and overpipe another tip 5 line. Insert wings and support with cotton balls to maintain angle. Overpipe body with same tip for head and body. Let dry completely.

Step 2

Make fondant apple blossoms, 4 for each treat.

Step 3

Bake and cool sheet cake using firm-textured batter, such as pound cake. To cut treats use 3 in. circle cutter.

Cover with melted candy. Transfer to waxed paper-covered board and chill until firm. Recoat if needed for smooth finish.

Step 4

Set each treat on a flattened baking cup. Use Decorator Icing to pipe tip 5 bead bottom border. Use buttercream to pipe tip 3 light brown and tip 2 green scrolls. Attach apple blossoms and butterfly with icing.
