Preheat oven to 350°F. Lightly spray mini loaf pan with vegetable pan spray.
In small bowl, combine flour, baking powder and salt. In medium bowl, combine melted butter, sugar, egg, sour cream, zest and lemon extract; whisk thoroughly. Gently fold in flour mixture, mixing only until incorporated. Pour batter into prepared pan.
Bake 28-32 minutes or until toothpick inserted in center comes out clean. Cool loaf in pan 5 minutes. Remove to cooling grid and cool completely. In small bowl, stir together confectioners’ sugar and milk. Drizzle glaze over loaf.
