1/3 cup granulated sugar
1 egg
2 tablespoons sour cream
1 teaspoon lemon zest
1/4 teaspoon lemon extract
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons confectioners' sugar
1/2 teaspoon milk

- Preheat oven to 350°F. Lightly spray mini loaf pan with vegetable pan spray.
- In small bowl, combine flour, baking powder and salt. In medium bowl, combine melted butter, sugar, egg, sour cream, zest and lemon extract; whisk thoroughly. Gently fold in flour mixture, mixing only until incorporated. Pour batter into prepared pan.
- Bake 28-32 minutes or until toothpick inserted in center comes out clean. Cool loaf in pan 5 minutes. Remove to cooling grid and cool completely. In small bowl, stir together confectioners' sugar and milk. Drizzle glaze over loaf.
