Mini Glazed Lemon Loaf Recipe

These mini lemon cakes pack a lot of delicious flavor into one small loaf. Moist lemon loafs drizzled with just the right amount of iced sugar glaze are a treat any day of the week. Step 1

Preheat oven to 350°F. Lightly spray mini loaf pan with vegetable pan spray.

Step 2

In small bowl, combine flour, baking powder and salt. In medium bowl, combine melted butter, sugar, egg, sour cream, zest and lemon extract; whisk thoroughly. Gently fold in flour mixture, mixing only until incorporated. Pour batter into prepared pan.

Step 3

Bake 28-32 minutes or until toothpick inserted in center comes out clean. Cool loaf in pan 5 minutes. Remove to cooling grid and cool completely. In small bowl, stir together confectioners’ sugar and milk. Drizzle glaze over loaf.
