Melted Snowman Cookies

1. - Make Cookies: Preheat the oven to 350°F.
2. - In a large bowl, cream the butter and sugar with an electric stand mixer or hand mixer until light and fluffy. Beat in the egg, and vanilla and almond extracts.
3. - Mix together flour, baking powder, and salt. Add dry ingredients to the butter mixture 1 cup at a time, mixing after each addition. Once the dough mixes into a ball, you're done mixing. Test that the dough is sticky and holds a shape but doesn't stick to your fingers. Do not chill dough.

   For Muffin Top Pan Method:

   1. Roll dough into 1 1/2-inch balls.
   2. Place the dough balls in the cavities of an ungreased Muffin Top Pan and press into an even layer, filling the cavities about 2/3 of the way full.
   3. Bake for 7-9 minutes or until cookies appear set in the center. Cool in pan on a wire rack completely. Remove the cookies from the Muffin Top Pan and set them upside down (with the side that baked in the pan facing up) on your decorating surface.

   For Baking Sheet Method:

   1. Divide the dough into 2 balls, then form them into 2-inch-thick rectangles discs. This will keep the dough from falling apart while rolling, and the rectangular shape will help you cut more cookies out of each rolling
   2. On a floured surface, roll out the dough into a circle approximately 12 inches in diameter and 1/8-1/4 inch thick.
   3. Dip a 3-inch round cookie cutter in flour (repeating before each use) to cut circle shapes.
   4. Bake the cookies on an ungreased baking sheet with or without parchment paper. Bake for 8-11 minutes or until cookies are lightly browned. Transfer to a wire rack to cool completely.
6. - Decorate Snowmen Cookies: Lay marshmallows on their side on the decorating surface. On the side facing up, use Orange Cookie Icing, with the tip opened only a small amount (for a drawing-sized opening) to make a small, elongated triangle carrot nose on the center of each marshmallow. Use the Black Cookie Icing, with the tip opened a little more to make two eyes above the nose. Allow to set for about 15 minutes, or until the icing will no longer drip if the marshmallow is lifted upright.
7. - Use White Cookie Icing with the tip opened a smaller amount (for an outlining-sized opening) to outline a melted shape on each cookie. Allow to set for a few minutes before opening the tip more widely to flood inside the shape with the same icing. Use a toothpick to pop any bubbles in the icing. While still wet, add a marshmallow to the top of the melted shape, along with three Rainbow Chip Crunch Sprinkles (I used the black sprinkles) to look like the snowman's buttons. Allow to set for at least an hour.
8. - After the white icing has started to set for about an hour, use the Black Cookie Icing with the tip opened only a small amount (for a drawing-sized opening) to draw two stick arms on the top of each cookie. Let the icing set completely (about 4 hours) before serving.
