Step 1

In large bowl, whip meringue powder and 1/2 cup cold water with electric mixer on high speed until stiff peaks form, about 4 minutes.

Step 2

In saucepan, stir together sugar, corn syrup and remaining 1/2 cup water. Bring to boil; cool 1-2 minutes. Slowly add syrup to meringue mixture, streaming down side of mixing bowl. Whip on high 4 minutes. Add vanilla extract and whip until well combined. Use immediately to ice cakes or cupcakes.

Rated 5 out of 5 by from Tastes great! I needed egg whites to make my White Mountain frosting. Not wanting to run to the store, I pulled out a can of Wilton's Meringue Powder that had been hidden in my pantry shelf for (literally) decades. Since it was sealed, I decided to give it a try. Finding a recipe for Marshmallow Icing on this website, I made it up. The consistency and flavor is the same as my White Mountain recipe. Very easy! I would halve the ingredient amounts. I have enough icing for at least 2-3 cakes.
