Perfect for taking it easy on those hazy, lazy days ? simple iced 1M swirled cupcakes in refreshing colors. The baking is just as easy using bright ColorCups.

Step 1

Make cupcakes. Preheat oven to 350° F. Line standard muffin pan with baking cups.

In large bowl, combine cake mix, Margarita mix, egg whites and vegetable oil using electric mixer. Stir in lime zest; mix completely. Fill prepared pans 2/3 full.

Bake 22-24 minutes or until toothpick inserted in center of cupcake comes out clean.

Cool in pan on cooling rack 5-8 minutes. Remove cupcakes from pan; cool completely.

Step 2

Tint icing. Prepare buttercream frosting following recipe instructions. Tint icing using small amount of Rose Icing Colors.

Step 3

Decorate cupcakes. Using tip 1M, pipe buttercream swirls on top of cupcakes.

Top cupcakes with white sparkling sugars. Insert lollipop sticks into cupcakes.

Rated 5 out of 5 by from I've made these a couple times already, very delicious!! I just wonder if anyone has had the issue with the paper liners pulling away from the cupcake after baking? Happened both times now, and I've never had it happen with any other cupcake.

Rated 4 out of 5 by from Love margarita cupcakes. I use tequila instead of oil when I made it though. I rolled the edges of the cupcakes in raw sugar instead of colored sugar. I made cookies shaped like half of a lime to sit on the edge of the cupcake instead of the topper shown above. They were a huge hit at the cookout.

Rated 4 out of 5 by from These were delicious! I used the margarita cupcake recipe and lime buttercream. I attempted to rim the cupcakes with green sugar but ran into some difficulty with that and ended up piping swirls instead. I think sparkling piping gel around the rim would have been easier and may have had the same effect. I made pina colada cupcakes to pair with these margarita cupcakes and both were a hit at the bridal shower.
