Margarita Cupcakes
Perfect for taking it easy on those hazy, lazy days — simple iced 1M swirled cupcakes in refreshing colors. The baking is just as easy using bright ColorCups.

Ingredients

  • 1 package white cake mix

  • 1 can frozen Margarita mix

  • 3 egg whites

  • 2 tablespoons vegetable oil

  • 1 tablespoon lime zest

  • Buttercream Frosting

  • White Sparkling Sugar, 8 oz.

  • Rose Icing Color, 1 oz. - Pink Food Coloring

  • Tools

  • 12-cup Standard Muffin Pan

  • Cupcake liners

  • 12 in. Disposable Decorating Bags

  • Open Star Cake Decorating Tip 1M

  • Shallow bowls

  • Electric mixer

  • Lollipop sticks

  1. Make cupcakes: Preheat oven to 350° F. Line standard muffin pan with baking cups.
  2. In large bowl, combine cake mix, Margarita mix, egg whites and vegetable oil using electric mixer. Stir in lime zest; mix completely. Fill prepared pans 2/3 full.
  3. Bake 22-24 minutes or until toothpick inserted in center of cupcake comes out clean. Cool in pan on cooling rack 5-8 minutes. Remove cupcakes from pan; cool completely.
  4. Tint icing: Prepare buttercream frosting following recipe instructions. Tint icing using small amount of Rose Icing Colors.
  5. Decorate cupcakes: Using tip 1M, pipe buttercream swirls on top of cupcakes. Top cupcakes with white sparkling sugars. Insert lollipop sticks into cupcakes.
