Step 1

In advance: make 10 white gum paste calla lilies with yellow centers following instructions from Gum Paste and Fondant Course. Make extras to allow for breakage and let dry.

Step 2

Also: Make blossoms and leaves. Tint a portion of gum paste green. Roll out green gum paste less than 1/16 in. thick. Cut 15 leaves using medium Cut-Out. Roll out white gum paste 1/8 in. thick. Cut 15 blossoms using small blossom cutter from Stepsaving Set. Let leaves and flowers dry on cornstarch-dusted boards.

Step 3

Bake and cool 1-layer 10 in. and 2-layer 6 in. cakes. Prepare cakes for rolled fondant by icing lightly with buttercream. Prepare cakes for Stacked Construction, with 6 in. cake positioned 1 in. from edge of 10 in. cake.

Step 4

Tint 42 oz. fondant green. Cover cakes; smooth with Fondant Smoother. Pipe tip 7 bead bottom borders. Chill cakes before attaching trims. Mix melted green candy with a little white to match color of leaves. Attach flowers and leaves with melted candy.

Rated 5 out of 5 by from As someone who has used fondant and made flowers this was an easy cake to create. It is simple, but striking. I made the flowers several days ahead of time to be sure that they turned out and I did make extra flowers in case, when assembling, I had any mishaps. I had actually never made the calla lily before and followed the directions on the wilton website and my flowers were perfect! The detail of sugaring the center stem of the lily made the flower that much more beautiful. The cascading of the lily's was a little trying, but I used some fondant in places as "glue" to both hold in place and hold up some of the lilies and it was a great trick for later cakes that I made. To do this I simply took a small piece of fondant and rolled it into a ball, the size of ball will vary depending on how many flowers you want to anchor, I placed the ball on an area that I wanted the lilies to stand and glued it down with some gum paste glue, I then inserted the stem of the lily into the ball firmly and placed another lily over the ball to hide it. I was concerned about matching the colors on the cake to the colors in the flowers and I avoided that the first time I made the cake by using white fondant, but once I was over my fear of actually putting together a successful piece I was able to repeat the cake and match the colors. I knew already that the details would work out because I had made the cake once and so I was able to concentrate on the coloring and the second time was also successful. This cake is great for just about any occasion and it is definitely a crowd pleaser.
