Decorating cupcakes is super easy with these Light and Fluffy Rainbow Cupcakes. These colorful cupcakes are great for birthday parties, weddings or any colorful occasion. Favorite cupcake mix or recipe (3 to 3½ cups batter needed)
White Ready-to-Use Decorator Icing – 4.5 lb. Tub (2 cups needed)
One day in advance, make sprinkles.
Prepare ½ recipe of royal icing following recipe instructions. Divide equally into seven portions. Tint each portion green, yellow, orange, pink, blue, teal and violet using icing colors. Prepare seven decorating bags with tip 2 and tinted icing. On parchment paper-covered board, pipe several lines in each color; let dry, about 3 to 4 hours.
Bake and cool cupcakes in watercolor liners.
Prepare decorating bag with tip 2A and decorator icing. Pipe swirls on cupcakes.
Break up royal icing lines into small sprinkle shapes. Sprinkle on top of cupcakes.
