Wow your friends and family with this easy-to-make dessert—no mixer needed. The tart, bright filling with a sweet dusting of powdered sugar is always a hit for breakfast, snacks and fancy desserts. Serve with a twist of lemon on top.
In large bowl, combine flour, butter and the 1/2 cup confectioners' sugar; stir to form a soft dough. Press into bottom of 13 x 9 in. pan.
Bake 22-25 minutes or until edges of crust are golden brown. In small bowl, whisk eggs, granulated sugar, baking powder, salt and lemon juice until smooth. Immediately pour over hot crust. Return to oven and bake an additional 18-20 minutes or until edges are golden brown and center is set. Cool completely in pan on cooling grid. Dust cooled bars with remaining confectioners' sugar. Refrigerate before cutting.
