1. - In a large bowl, beat the cream cheese and butter together with an electric mixer on medium speed until the mixture is well combined.
2. - Add flour, vanilla and salt; beating until the mixture is just combined.
3. - Divide the dough into 2 disks. Wrap the disks in plastic wrap and let them chill for at least 12 hours in the refrigerator.
4. - Once properly chilled. Prepare for baking by removing them from the refrigerator and preheating the oven to 375°F.
5. - Working with 1 disk section at a time, roll each to ? inch thickness on a lightly floured surface.
6. - Cut dough into cookies by using a 2 inch round cutter. Place them on a cookie or baking sheet and make an indentation in each with your thumb.
7. - Spoon 1/2 teaspoon of pastry filling of your choice into each indentation.
8. - Bake for 16-18 minutes or until the edges are golden brown. Remove them from the oven and let the cookies cool on that pan for 5 minutes.
9. - Remove cookies from the pan; letting them cool completely to room temperature on a cooling grid or wire racks.
10. - Dust cookies with confectioners sugar before serving and enjoy.
