Two to three days in advance: Make fondant tree topper. Tint 6 oz. fondant dark green; knead in 1/2 teaspoon Gum-Tex. Roll out 1/8 in. thick. Using pattern, cut tree shape. Let dry 2-3 days on waxed paper-coverd board dusted with cornstarch. Attach to 8 in. cookie stick with thinned fondant adhesive, leaving 4 in. extending at bottom; let dry. Reserve remaining fondant.
