One day in advance, tint a small amount of fondant red and add 1/4 teaspoon of gum-tex. Roll out to 1/8 in. thickness and cut Santa hat. Let dry on surface dusted with cornstarch.
Bake and cool snowman cookie. Ice smooth with copper icing and attach fondant hat. Cut 3/8 in. wide white fondant strips and attach to hat with icing. Use large opening end of tip 6 to cut white fondant pom pom and attach to hat with icing.
Tint fondant green, roll out 1/8 in. thick and cut into assorted-size triangles. Attach to bottom of hat with icing.
Pipe tip 3 black dot eyes and outline mouth (smooth with finger dipped in cornstarch). Pipe tip 2 rose tongue and red dots on points of triangle pieces. Pipe tip 6 pull-out copper nose and rose dot cheeks. Add tip 352 copper pull-out ears.
