Enormous Birthday Wishes Cake

This perky pachyderm cake brings a ton of birthday greetings to the party (he?s made from our Stand-Up Cuddly Bear Pan). Treat the guest-of-honor to a special Jumbo Muffin of his own or add more muffins for larger parties.

Step 1

Trim off ears from cake.

Step 2

Cut elephant ears out of cake board. Cover with Fanci-Foil Wrap. Tape two dowel rods to the back of each ear. Ice front of ears smooth. Insert ears into cake. Cover sides and back of ears with tip 18 stars.

Step 3

For paws, attach marshmallows to dowel rods and insert into cake. Ice top and bottom paws smooth with spatula.

Step 4

Insert dowel rod for trunk. Build up with tip 1A. Ice tip of trunk smooth.

Step 5

Outline facial features and fold lines on paws with tip 4 strings. Pipe in tip 4 eyes (smooth with finger dipped in cornstarch).

Step 6

Pipe tip 18 stars on face, body, paws and trunk. Pipe tip 8 dot toes and pull out string tusks. Pipe tip 4 string eyelashes.

Step 7

Ice cupcake smooth with spatula. Print tip 2 message. Position candle.

Rated 5 out of 5 by from I loved this. I put a pink tutu on it for a little girl's birthday. She loved it! I used a 8" square cake under the elephant so they would have more servings.

Rated 5 out of 5 by from The elephant is a complete success! I've done this one several times in various themes and it always turns out cute. For the ears, we used foam from the craft dept, it's lighter than the cake boards and isn't always necessary to cover with icing. I've also used marshmallows for a smaller trunk.

Rated 5 out of 5 by from I loved this cake and so did my daughter for her 1st birthday! I think the instructions worked very well to construct the cake but the frosting it was a bit challenging as i made homemade buttercream frosting. I had to keep putting the frosting back in the fridge to harden up or else my stars turned out mushy or it slid down the cake. I made a pink version with darker pink ears to match my daughter's favorite elephant blankie. Family and friends raved about the cake and really preferred the heavier and less sweet cake mixture of pound cake and regular cake mix. :)
