Ingredients
Cupcake Ingredients
1 package white cake mix
1 1/4 cups Champagne (sweet or semi-sweet)
4 egg whites
1/3 cup vegetable oil
Frosting Ingredients
1/2 cup unsalted butter, softened
4 cups powdered sugar (confectioners' sugar)
4 cups sifted powdered sugar (confectioners' sugar)
2-3 tablespoons milk
Decorating Ingredients
Gold pearlized sugar

Make & bake cupcakes
Preheat the oven to 350ºF. Line the cupcake pan with liners.
In a large bowl, combine cake mix, Champagne, egg whites and oil. Beat with an electric mixer on low speed 30 seconds, scraping bowl frequently. Beat at medium speed for 2 minutes.
Fill baking cups 2/3 full with batter.
Bake for 18-20 minutes or until a toothpick inserted in a cupcake’s center comes out clean. Cool cupcakes in the pan on a cooling rack for 5 minutes. Remove from the pan and cool completely on the rack.
Make frosting
Beat butter in a large bowl with an electric mixer until smooth. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. Add milk and beat until light and fluffy.
Decorate cupcakes
Using a 1M tip, pipe a large rosette on top of each cupcake. Top with gold pearlized sugar for some extra sparkle.
